Sticky Date Pudding
Preheat oven to 180C
280gpitted dates1 tspbi carb soda1 cupboiling water
Chop pitted dates and place in a bowl. Sprinkle over bi carb soda and boiling water in saucepan.
Bring to boil and then let sit for 10 minutes, then mash well
1/4 cupbrown sugar6 tbspbutter
Beat brown sugar and butter in a bowl until combined and smooth
2eggs
Beat in eggs
1 1/4 cupsplain flour1 1/2 tspbaking powder
Add plain flour then sprinkle baking powder across the surface.
Add dates, mix quickly until dates are well incorporated into the batter.
Pour into muffin tray
Bake for 12-15mins
