Spinach and Lentil Stew
someolive oil
Heat olive oil in frying pan
1onion1carrot11 celery
Cook onion carrot 1 celery until soft
1 tbscurry powder3 clovesgarlicsomechilli flakes
Add curry powder, garlic and chilli flakes, cook until fragnant
2 cupsvegetable stock2 x 400g candiced tomatoes2 canslentils
Add vegetable stock, diced tomatoes and lentils and bring to boil
Reduce heat and simmer uncovered for 8 minutes
somespinach leavessomelemon juice
Stir in spinach leaves and lemon juice until spinach has wilted
