Pad Thai


Soak the rice-stick noodles in warm water for 10mins and then drain


Stir fry oil, garlic, chillies and chicken or pork for 2-3 min


Add the chives and noodles, cover and cook for 2 mins


Add fish sauce, lime juice, brown sugar and eggs (beaten)


Stir in bean sprouts, unsalted peanuts and serve with crispy fried onion
