Indian Shepherd’s Pie
Preheat oven to 200 degrees and grease casserole dish
500glamb mince
Cook lamb mince until browned and remove
2onions1eggplant2 clovesgarlic
Saute onions, eggplant, garlic and cook until soft
1/3 cupvindaloo or rogan josh paste
Stir in vindaloo or rogan josh paste
400gdiced tomatoes1/3 cuptomato sauce2/3 cupwater
Add cooked lamb and diced tomatoes, tomato sauce and water .
Bring to boil, cover with a lid and leave to simmer for 10 mins.
1kgpotatoes1/2 cupmilk75gmargarine
Make mash potatoes with potatoes, milk and margarine.
Transfer to casserole dish, spoon mash on top of lamb. Sprinkle with cheese.
Cook in oven for 35 mins
