Creamy Potato Salad

• 1.5kg potatoes

Boil potatoes for 12-15mins

Drain and leave to cool

• 1 cup mayonnaise
• 1 small red onion
• 1 tbsp dijon mustard
• 1 tbsp lemon juice
• 1/2 cup paprika

Combine mayonnaise, red onion, dijon mustard, lemon juice and paprika

• 4 eggs

Stir through potatoes and chopped hard boiled eggs

• some shallots

Sprinkle shallots over the top of mixture
